Today is World Pasta Day! Being Italian, pasta is a staple of my household. Plus, it’s really easy to throw together a yummy meal without a ton of effort or planning.
Take this Barilla Campanelle With Three Cheese Sauce, Roasted Peppers, Olives, and Oregano. It only took about 10 minutes to prep and 10 minutes to cook – that’s a filling meal in 20 minutes. You just can’t beat that.
After a long (boring) day at the office, I usually struggle with dinnertime. I work til 5pm, usually grab Levi from the babysitter at 5:30pm, and then he’s hungry pretty quick. I hate to give him a snack, because then he doesn’t want dinner. So then I’m scrambling to come up with something quick and healthy and let’s just say frozen pizza is not out of the question when I’m up against a hungry toddler. I know I’m not alone, either. While families these days are making more time for dinner, 2-in-5 meal-preparers agree it is difficult to find time to prepare dinner in their household.
Luckily, cooking pasta is not much harder than boiling water. As long as I remember to set the timer and don’t get distracted by Levi exploding lotion all over the place, I’m good to go.
Pasta is versatile and allows for multi-tasking while cooking. I was pretty bad with the Barilla Campanelle when I made it – normally I duck into the kitchen at least once or twice to stir the pasta to make sure it doesn’t clump up, but Levi wanted to read the Lorax and I forgot I was cooking until the timer went off.
Luckily, this pasta pretty much cooks itself and it was totally fine. I had to hide the peppers and olives under the sauce instead of mixing them in because Levi’s a little picky about new vegetables, but he still totally enjoyed it.
