I usually don’t have time to cook breakfast, but this Pancake Muffin recipe is super easy to make. Plus – it has chocolate chips. Y.U.M.
I first heard about pancake muffins on Twitter. I love making pancake muffins because the filling possibilities are endless. I’ve used blueberries, walnuts, peanut butter chips – you name it, you could probably put it in a pancake muffin!
This morning I went with my favorite breakfast standby. I used box pancake mix for simplicity’s sake, but you could certainly use a homemade pancake recipe instead.
Easy Chocolate Chip Pancake Muffins
-2 C box pancake mix
-1.5 C water (room temperature)
-1/4 C maple syrup
-1/4 C chocolate chips
Preheat your oven to 350. Grease a standard-size muffin pan. Mix your pancake mix and water together in a bowl until large lumps disappear (about 25-30 seconds).
Swirl maple syrup into pancake batter and mix slightly. This is a great step to have the kids help with.
Pour batter into muffin tins and add chocolate chips. There are two ways to do this:
For filling in the center of your muffins: Fill muffin cups 3/4 full with batter. Sprinkle chocolate chips in the center of each muffin and push down slightly. Allow mix to rest for 4-5 minutes before moving on to Step 4.
For filling scattered in muffins: Fill muffin cups 1/2 full with batter. Sprinkle chocolate chips on top of batter. Finish filling muffin cups with remaining batter until just below top of muffin pan.
Bake for 30-40 minutes at 350 until tops are golden and spring back when touched lightly. Allow to cool and enjoy!
